Is it back? Or did it never really leave us? The Roast Beef Sandwich ($7) at Maverick’s in Roseville was the item that made the restaurant’s reputation over its nearly 20-year lifespan from 1999‒2018. And now that the restaurant has rebooted under new ownership, it seems likely to keep the customers loyal without missing a beat.

It’s a simple dish: thin slices of mild, pinkish roast beef stacked up on a sweet, almost King’s Hawaiian-like roll. It doesn’t sound like much, but the meat is a blank slate for the restaurant’s housemade side sauces, which are the real secret to Maverick’s appeal. They include everything from a mustard-and-vinegar-based Carolina Gold sauce, to a creamy horseradish sauce, to a sweet whiskey habanero sauce (hot but not lethal), to a cocktail sauce–like Maverick’s sauce. Grab three or four or five of these sauces in the little tubs provided for your convenience and go to town—you’re getting many enjoyable sandwiches for the price of one. Long may Maverick’s (2.0) reign!
