We spied the Wyn65 food truck out last Saturday, vending on Quincy Street outside the future home of Popol Vuh and Centro. The dual-concept restaurant from Lyn65 chef Jose Alcaron is targeting an October opening.
For now in the Winnebago, they’re testing out tacos—we inhaled a couple lamb barbacoas—and papas chingonas, fries smothered in chipotle mayo and queso fresco. Sounds like a solid future pitstop on the walk from Able Seedhouse to Indeed Brewing, no?
