Modist Brewing Company head brewer and co-owner Keigan Knee and Fulton Brewing head brewer Mike Salo are longtime friends and fans of beer, so collaborating was a cinch.
“It was just a natural fit. We did the first In Cahoots! together at Dangerous Man, and we won that one,” Knee recalls.
The plan for this year’s event is to be unique. “The first thing we said is it has to be refreshing, not a sour, not a pale ale, or an IPA,” Knee says.
Their collaboration is a botanical, cocktail-inspired beer named Parallel Paradise, featuring hibiscus, juniper, and cinchona bark. It was also dry-hopped with lemon and orange zest for good measure.
“It’s a totally different way of looking at beer,” Knee says of the somewhat unexpected flavors the beer will provide. “This is something I’ve never had before, Mikey’s ever had before.”
