Chef Rick Bayless Debuts Beer Line

Chicago chef Rick Bayless (Topolobampo, Frontera Grill) will debut his Tocayo beer line at Xoco Bistro this week. The modern Mexican master’s first beer is a Hominy White Ale, a Belgian-style wit brewed with hominy and coriander.

Next spring, Bayless will open Cruz Blanca, a long-anticipated brewpub in Chicago’s West Loop. He’ll distribute the beers brewed at Cruz Blanca to his other restaurants around town.
