Red Rabbit to open in North Loop by late fall

Red Cow owner Luke Shimp (pictured, above) has announced a new concept, Red Rabbit, will take root in the North Loop by late fall.

The Star Tribune reports the restaurant will be housed at Washington and 2nd Avenues North, in a 116-year-old building currently being used as an auto repair shop.

The patio will feature a retractable greenhouse-like enclosures that will help grow herbs for the kitchen and bar. The cocktails will be supervised by Ian Lowther, and the casual menu of pizzas and pastas will take shape under chef Todd Macdonald, most recently of the shuttered Parella in Uptown.
