Adam Eaton, chef at Saint Dinette, confirmed today an exciting development first reported by our own Steve Hoffman in the December issue of The Growler: that he, Laurel Elm, and Tim Niver plan to open a delicatessen featuring wood-fired bagels in the area of Lyndale and Lake in South Minneapolis.
The space is 901 W. Lake Street, kitty corner from Bryant Lake Bowl. The building has been most recently occupied by Spill The Wine, and then Tinto Cocina + Cantina, which has since found a home at 50th & Penn.
Eaton has spent the last few months perfecting his version of a Montreal-style bagel, a thinner and denser version than their Manhattanite cousins, that get boiled with honey and finished in a wood oven. The restaurant will feature house smoked meats and other deli favorites.
