Each week, Operation: Take-Out brings you specially crafted meals for two with ideal beverage pairings from your favorite local restaurants. We’d like to thank Hop & Barrel Brewing for their underwriting support in the month of June.
THE RESTAURANT: This week’s beef brisket taco feast comes from Lakeville Brewing Company, a sister brewpub to Inver Grove Brewing Company.
Lakeville Brewing Company’s origins come from a restaurant that co-owner Glen Bruestle had planned to put into a building that would have been split with a brewery. After being approached by fellow co-owners Megan and Don Seiler, Bruestle and his wife decided the thing to do would be to join forces. “My dream of opening a restaurant kind of overnight turned into opening a brewery as well,” laughs Bruestle.
Bruestle describes his brewery-restaurant as family-friendly, and notes: “We’ve got a very large yard so we’ve got quite a few tables here spread out safely, and starting [last week], we’re able to have people in our dining room too.”
THE MEAL: The Lakeville Brewing Company meal kit revolves around oven-roasted barbacoa-style beef brisket. Paprika, cumin, bay leaves, housemade salsa, brown sugar, and other spices come together over the course of an 8-and-a-half-hour cook time to create beautifully shreddable taco meat.
This meal is a customizable, mix-and-match, build-the-taco-of-your-dreams experience: Beyond beans and rice, you receive tender, fresh-grilled tortillas, crema, cotija cheese, pickled veggies (cucumbers, jalapeños, onions), chips, and pico de gallo.
As for the beer: the plate comes with two branded pint glasses and two Crowlers of beer: Knee-High Cream Ale and a drinkable pandemic-inspired release, Six Feet Bock.
Meals are pre-order only and available for pick-up on June 18. No substitutions. Ticket sales will close and no refunds will be given after 5pm CST on June 17.
