Each week, Operation: Take-Out brings you specially crafted meals for two with ideal beverage pairings from your favorite local restaurants. We’d like to thank Hop & Barrel Brewing for their underwriting support in the month of June.

THE RESTAURANT: This week’s risen brioche crust pizza comes from Pig Ate My Pizza in Robbinsdale, a part of the Travail restaurant group.

Chef and co-owner Mike Brown says opening the Pig Ate My Pizza brewpub relaunch in 2019 was an opportunity for the always ambitious Travail group to capitalize on the knowledge of chef de cuisine Andy Goettsch, a relentless homebrewer who created around 250 beers in the years before PAMP’s opening. The restaurant has become known throughout the state for the quality of its pies and its focus on farm-sourced ingredients.

THE MEAL: The cornerstone of the Pig Ate My Pizza meal is a frozen, ready-to-heat Piggy Pie. “It’s a meat lover’s pizza on our risen brioche crust,” says Brown. “It’s our number-one seller since we’ve been open.” Its toppings include pork sausage, pepperoni, bacon emulsion, toasted black pepper fennel, and oregano.

It’s also available in a vegetarian version featuring onion, red bell pepper, black olives, and mushrooms.

Meals also include a smoked chicken caesar salad with croutons and parmesan cheese, on romaine.

And dessert is included: each meal comes with two churros with Mexican chocolate.

Pig Ate My Pizza suggests purchasing a Crowler or two of its Grisette to pair with this pizza dinner. (Beer not included in the meal package, but available for purchase separately at Pig Ate My Pizza).

Meals are pre-order only and available for pick-up on June 11. No substitutions, ticket sales will close on June 10 at 12pm CST. No refunds after 12pm CST on June 10.
