First: it’s important to drink this cider at a warm enough temperature (at least 50°F) to allow all of the flavors to express themselves. Your reward is a refreshing, white wine-like experience. This cider is almost clear with just a hint of gold color. Carbonation is light and delicate and the aromas suggest ripe green pears with subtle vanilla. On the palate, the golden apple and pear flavors and pleasant acidity are analogous to a fine Pinot Gris. The rye whiskey barrel in which this cider matured contributes to the soft texture and imparts subtle spice notes. An elegant pairing with chicken, fish, and anything spicy.
